Get Baking this Easter and make your own Cute Cupcakes!
We used a simple Vanilla Cupcake Recipe and Decorated with Whipped Cream.
Easter Bunny Cupcakes: When Cupcakes have cooled, cut a circle out of the centre of the Cupcake, then fill with whipped cream. Cut Cake Circle in half, place into cream as Bunny Ears.
Easter Nest Cupcakes: Cut circle out of the centre and fill with whipped cream. Add Spun Sugar Nest and top with Chocolate Speckled eggs.
To make Spun Sugar Nests: Place 1 Cup of sugar, 1/2 cup water into a heavy-bottomed saucepan over low heat. Stir occasionally until sugar is dissolved. Raise heat to high, and bring mixture to a boil. Continue cooking until amber in color. Remove from heat, and briefly plunge the saucepan into ice water to stop the cooking. Let stand to thicken slightly, about 1 minute. Use immediately.
Spray the back of a mini muffin pan with cooking spray. Dip a fork into the sugar and drizzle around each muffin cup in a circular motion. Let harden completely. Nests should easily come off cups.

So hopefully she won’t mind me sharing her recipe with you.
1/2 Cup Sultanas
1/4 Cup Glace Cherries
1/2 Cup Blanched Almonds
1 Plain Madeira Cake
2 Slightly rounded tbsp Coconut
2 slightly tbsp Cocoa
1/2 Cup Castor Sugar
1 tbsp chopped crystalised Ginger
1 tsp Almond Essence
3 tbsp Rum
1/4 Melted Copha
Coconut to Garnish
Finely chop Sultanas, Cherries & Almonds & Crumble Cake.
Combine the cake crumbs with the coconut, cocoa & sugar and add sultanas, ginger, cherries and almonds.
Mix the almond essence, rum and melted copha together and stir into dry mix. Blend Well.
Form into balls and roll in the coconut. Chill Overnight. Serve.

30mL Peppermint Schnapps
60mL Vanilla Vodka
60mL White Creme de Cacao
Small Candy Cane
Rim your glass with Red Sugar ~ Rub the rim of the glass with Grenadine and dip rim of the glass along a saucer filled with the sugar.
Combine vanilla vodka, white creme de cacao, and peppermint schnapps in an ice-filled cocktail shaker. Shake vigorously, and strain into a cocktail glass. Pour Grenadine over top of cocktail.
Garnish with a Peppermint Candy Cane and a Sassaby 2 inch Christmas Party Circle
4 Litres Peppermint Ice Cream
1.25 Litres Egg Nog
1.25 Litres Ginger Ale
2 Cups Double Cream
1 Cup Crushed Peppermint Candy Canes
Combine first 3 ingredients in Punch Bowl.
Top with Cream, then Crushed Candy Canes & Serve!
