Rum Balls Recipe {Christmas Cooking}


 

As far as I’m concerned, it just isn’t Christmas without my Mum’s Famous Rum Balls!

So hopefully she won’t mind me sharing her recipe with you.

 

Rum Balls

 
Ingredients

1/2 Cup Sultanas

1/4 Cup Glace Cherries

1/2 Cup Blanched Almonds

1 Plain Madeira Cake

2 Slightly rounded tbsp Coconut

2 slightly tbsp Cocoa

1/2 Cup Castor Sugar

1 tbsp chopped crystalised Ginger

1 tsp Almond Essence

3 tbsp Rum

1/4 Melted Copha

Coconut to Garnish

 

Method

Finely chop Sultanas, Cherries & Almonds & Crumble Cake.

 

Combine the cake crumbs with the coconut, cocoa & sugar and add sultanas, ginger, cherries and almonds.

 

Mix the almond essence, rum and melted copha together and stir into dry mix. Blend Well.

 

Form into balls and roll in the coconut. Chill Overnight. Serve.
